1. Colony

When you visit Colony for its Sunday vintage champagne brunch, we recommend going with an empty stomach and taking advantage of its extensive offerings spanning Western and Asian cuisines. Get the party started with unlimited pours of Louis Roederer Cristal Brut 2013, which will pair extremely well with your complimentary serving of Oscietra caviar. These whet the appetite for more delicious eats to come—at the ice bar, you have oysters, prawns and mussels that taste like they've just been pulled from the ocean. Save space for the fresh sushi and sashimi, as well as the assortment of salads at the salad bar. Our favourite is the quinoa salad tossed with marinated shrimp and brightened by the citrus dressing.

When you’re ready for mains, don’t forget to order the Colony laksa steeped in a rich broth and elevated with homemade lobster balls, and the a la plancha Boston lobster enriched with truffle Hollandaise sauce. 2. Beach Road Kitchen

This beloved buffet restaurant reopened its doors on November 20 and continues to serve up a plethora of delectable dishes. Highlights from the menu remain the seafood on ice, which includes a fresh selection of poached prawns, Alaskan king crab and Boston lobster, as well as Fine de Claire and Canadian oysters. Make a pit stop at the charcoal grill for an order of lobster thermidor as well as the grilled catch of the day, simply seasoned with Maldon sea salt and lemon to let fish’s sweet and satisfying flavours shine through. While Western favourites such as pastas and pizzas are always reliable, be sure to order a bowl of the flavourful laksa noodles with lobster dumpling. 3. StraitsKitchen

Craving local fare? This halal-certified buffet restaurant features a variety of Chinese, Indian, Malay and Peranakan cuisines, whipped up by a team of talented chefs in the live-theatre kitchens. It’s hard not to be tempted by the seafood offerings such as Laksa Singapura, sambal tiger prawns and wok-fried seafood rice. In line with Grand Hyatt Singapore’s roadmap to sustainability, these are only prepared with ASC- and MSC-certified sustainable produce, meaning they were responsibly farmed according to the organisations’ strict standards. Nostalgic hawker fares dominate the menu too; you can get your fill of the crowd-favourite Hainanese chicken rice that’s steamed to juicy perfection. Head to Basilico this weekend for a buffet brunch featuring hearty Italian fare, curated by chef Valerio Pierantonelli and his team. Authentic and contemporary, Basilico’s selection of homemade pastas, wood-fired pizzas and other Italian fare is testament to the experience of its well-loved buffet lunches and brunches. The menu consists of straightforward and intense flavours, including the Wagyu beef bombette stuffed with smoky scamorza and served with an enjoyable tomato and rocket salad; hearty oven-baked focaccia filled with layers of black summer truffle and three-milk robiola; and Tiramigui, a modern reinterpretation of the traditional dessert which is served in a wine glass. Despite Covid-19 restrictions forcing many establishments to change the way they operate, Carousel at Royal Plaza on Scotts Singapore remains the go-to buffet restaurant for its expansive offerings. While buffet spreads are back on display, staff are at hand to serve the dishes to ensure the safety of guests. Enjoy crowd pleasers such as fresh slices of salmon and tuna, and Maine lobsters and scallops that taste as though they’ve just been pulled from the ocean. The Dining Room is an ideal spot for business lunches, family gatherings and celebrations when you are trying to please a range of ages and tastes. The huge menu includes vegetarian, vegan and gluten-free options and focuses on proven Southeast Asian favourites, created by an experienced hand. Standouts include the signature murgh mahkani (chicken curry in a creamy tomato sauce), and the crowd favourite seafood mee siam. The version here is a fluffy dry-style mee siam with plenty of wok hei and served with scallops, prawns, grilled fish and extra homemade sambal. The Line continues to offer an expansive buffet for guests. From the seafood harvest to the Japanese, Western and Lebanese selections, dishes here are cooked with high-quality produce and ingredients, which make for memorable meals. In the Japanese section alone, you have the well-crafted snow crab maki, crab maki ebi and flamed salmon aburi. The latter is worth ordering—what you get is an assembly of sushi rice, crispy cucumber and delicately charred salmon to give each bite a smoky touch. A trip to Melt Café is a great way to ‘travel the world’ without leaving Singapore, thanks to its extensive spread of international dishes. The buffet restaurant is popular for its Indian and continental stations, with a few notable highlights. The tandoori chicken from the Indian station is perfectly charred and tender, and enhanced with mint chutney. The continental fare highlights the perfectly seasoned roasted lamb with red wine sauce. 9. The Orchard Café

From Western cuisine to local fare, there’s something for everyone at The Orchard Café. Buffet lunches and dinners feature Asian and international fare listed on diner-friendly menus. Seafood platter starter includes mussels, cherry clams with their sweet yet briny taste, dainty scallops, snow crab leg and chilled prawns. The Singapore laksa is a signature dish that is spicy, sweet and sour all at once.
