Smooth, thick avocado with sous-vide egg yolk sits alongside truffle pecorino with its sharp salty taste, balanced by crunchy chia seed crackers. Grilled prawn wrapped in lardo combines sweet, salty and herbaceous tastes. Wood-fired free-range French poulet, tender and moist, is complemented by richly delicate green and purple potato leaves, with creamy, satisfying smoked potato purée.
