Set in the basement of a business hotel just off the main strip of Orchard Road, Tandoor has been serving authentic Northern Indian cuisine since 1985. The spacious but cosy-feeling restaurant is efficiently run by a handful of staff, who never miss a beat as they attend to every table with skill and warmth. The succession of dishes is well timed and skilfully executed. Simple but reassuringly homemade flavours rule the roost here. In vegetable-based dishes, the spices are blended and cooked to precise consistency. The use of Szechuan pepper to season the tandoor prawns produces a delightful effect; the grassy, floral fragrance adds a uniquely appetising accent. Mango curry may sound unusual, but the exotic tropical fruit’s ripeness blends easily with roti, rice and especially with other meat courses. The expertly baked tawa meen fish is simply exquisite, its flesh still whole while the gentle yellow spices give it a sweet aroma. There are good reasons why some establishments withstand the test of time; Tandoor is a good example and deservedly so. Delightful cooking, personable service and relatively good value keeps its customers happy—and returning.
