Refined flavours of seasonal ingredients come to the fore in creative lunch and dinner menus

 

Having honed his skills in some of Osaka’s top fine dining establishments, chef Taro Takayama brings to the table an exquisite take on traditional Osaka-style Japanese food, mixing classic techniques with culinary approaches gleaned from around the world. With a seasonal omakase concept, much of what diners can expect depend on what the chef is able to procure from his home country. The tasting menu is usually dominated by seafood, with prime meats making an appearance after. Takayama’s food is innovative but its flavours remain hearty and familiar. Previous showings include the Japanese spiny lobster done gusokuni-style with white miso broth, where the crustacean is cooked with its armour intact. Chef Taro takes the time to interact with guests and explain each dish, while attentive wait staff delivers impeccable service.
