Fine dining without any pretention is the order of the day at this loungey establishment, where guests sip cocktails in the spacious bar at the front of the restaurant before moving on to the sprawling U-shaped counter by the kitchen. There’s an element of dinner theatre, too, as guests get a front-and-centre view of the chefs cooking and plating the food amid the handsome slate surrounds, bordered by a backlit wall lined with greenery. There’s just enough spectacle—in the form of well-placed lights that form, say, a virtual ring of fire around a dish—to thrill guests, but otherwise, the food is firmly rooted in excellent European cooking techniques and a knowing way with good produce. Since opening in 2019, the kitchen has made it a point to include local produce such as the Toh Thye San duck served with a mole sauce, dabs of blueberry aigre-doux (sweet-and-sour sauce) and an earthy Rouennaise sauce tinged with the flavour of the duck’s liver.
