Opt for the eight-course Constellations tasting menu, which the chef tailors to guests’ preferences. The amuse-bouche is a tiny Marmite bite that lets you savour its flavour in an unthreatening way. The highlight among the starters is the smoked Loch Fyne salmon, whose delicate flavour is well-paired with crème fraiche. All three of the main courses (salmon, chicken and beef) are perfectly cooked, if not particularly spectacular. The beef is the best of the three, highlighting the distinct flavour of the Tajima wagyu that the restaurant has specially reared in Australia’s region of northern Victoria. By far the best, however, is the dessert art course that’s plated right at the table. Blue cornflower sauce with delicate floral notes is laid down to form a base for the Valrhona crémeux with crispy feuilletine layers, whipped hazelnut butter, bittersweet honeycomb, caramelised buckwheat, roasted corn and salty fingers (a salty succulent sometimes called “beach bananas”). The wine pairings are also excellent, thanks in part to the extremely extensive wine list.

Stellar has one of the best views of the city skyline, so request a table by the windows, which extend from the floor to the ceiling. The restaurant also has its own herb garden, planted right in front of the kitchen. Should you opt for the Constellations menu, you’ll be invited to try a few of its home-grown herbs as a palate cleanser in the middle of your meal. Stellar also has an extensive and impressive wine list with bottles from both the old and new worlds—including a selection from Syria.
