The must-try here is the sizzling umami-rich lamb neck char siew, grilled on bincho charcoal. Chef Drew Nocente does seafood well, too, specifically the fresh New Zealand mackerel marinated in gin and salt. It’s grilled so that the skin is crisp and the flesh succulent.
