As you enter Saint Pierre, you’ll immediately be drawn to the breathtaking view of Moshe Safdie’s iconic Marina Bay Sands. Here, chef-owner Emmanuel Stroobant, known for his innovation and artistry, curates dining experiences that seamlessly fuse French and Asian influences. Signatures include the Hokkaido hairy crab which is sweet and delicate. The Basque Country wild turbot, a star of the seas, takes centre stage with its pristine, firm flesh. It’s paired with seasonal zucchini, which adds a touch of refreshing earthiness. But what truly elevates this dish is the velvety white wine sauce, generously adorned with gleaming pearls of caviar. For dessert, Manjari chocolate from Madagascar is paired with French raspberries and lychee sorbet for an enchanting symphony of flavours, perfectly finished with a lavish pour of luscious raspberry coulis.
