Traditional dishes celebrate the uniqueness of Singaporean cuisine

 

Local chef Damian D’Silva continues to champion local heritage cuisine at Restaurant Kin, in partnership with The Lo & Behold Group. He brings to the dining table forgotten recipes cooked using time-honoured techniques that’s adjusted for the modern palate with lighter flavours and elegant presentations. His babi masak assam, a signature he has been serving for the past two decades in his previous restaurants, now comes with a soup brimming with salted vegetables and Chinese mustard. Another signature is the gulai, an Indonesian dish comprising beef chunks that are skilfully cooked in a rendang-like gravy rich with Indian spices.
