Peony Jade at Keppel Club is a culinary gem for those in the know. The dining hall resembles a Chinese courtyard garden, festooned with hanging red lanterns; there are also ample private rooms. The kitchen is helmed by executive chef Ricky Liew, who whips up classic and contemporary MSG-free dishes with the use of Western ingredients such as truffle and morel mushrooms. A trip here always calls for the crispy suckling pig stuffed with glutinous rice, which you should order a day in advance. It’s a glorious combination of textures, with the crispness of the skin and chewiness of the grains beautifully complementing the diced Chinese sausage, mushrooms and dried shrimp. The claypot-braised tofu, an off-menu recommendation by the staff, is another showstopper and is comfort food at its best; pair it with rice and savour to the last bite. There’s a broad range of choices, including numerous vegetarian options, making this a popular spot for casual or business meals.
For the intrepid diner, a bespoke omakase-style menu (starting at $68 per person) can be tailored to tickle the most jaded of palates. Do note that this requires advance arrangement with the chef.
