There are few things more mesmerising and magical than being surrounded by giant manta rays and hammerhead sharks. Gliding effortlessly through the water, the sight of a pair of playful mantas mimicking each other, oblivious to the passing school of fish, is simply poetry in motion. For obvious reasons, celebrity chef Cat Cora’s restaurant is a destination for special occasions. The menu changes regularly, but the focus is always firmly on seafood, with a concise selection that features some of the best offerings from around the world. Amongst them are French oysters, Hokkaido scallops and Alaskan crab. Preparation styles—sashimi, smoked, fried and grilled—vary widely as well. Should you choose to stray from the pescatarian diet (but why would you here?), premier meats like wagyu beef are also available. Befitting of the dining concept, the service is attentive without being intrusive; it’s an essential quality for the many celebratory diners.
