Singapore's colonial heritage is infused into a cocktails dripping with local references

 

Industry veteran Colin Chia is the brain behind this cocktail bar, offering a progressive cocktail menu that pays homage to Singapore’s rich culture. Bar manager Shelley Tai and head bartender Joshua Pang’s latest menu, dubbed The Cocktail Diaries: Flavours and Memories Volume 6, is presented like a journal that invites you to rediscover the island’s famous icons and landmarks with every sip. Embark on a grand island-wide adventure by sipping on the likes of Golden Charm, an ensemble of Hendrick’s Luna Gin, pomelo and London Essence ginger beer that was inspired by the buzzy Golden Mile Complex; and Can Bubble Gum?. The latter is a playful take on Singapore’s ban on chewing gum (which has been in place since 1992) and packs a punch with its mixture of Código 1530 Artesenal Mezcal, distilled tabasco and bubble gum air.
