But chef-owner Ivan Brehm keeps things simple and focuses on bringing out the natural flavours of ingredients used in each dish. Take his vegetable broth starter, for instance. It’s a simple dish—a vegetable soup with a dash of parsley oil—but its robustness hits the right spots immediately. It’s the same with the beef steak; the smokiness of the roast is perfect without masking the natural flavours of the meat. Nouri’s decor is also intriguing, with regular seats on one side and the chef’s table on the other, which provides diners a bird’s-eye view of chef Ivan and his team at work.
