Veteran chef Violet Oon's offerings showcase the country’s rich culinary heritage and its mix of Chinese, Malay, Eurasian and Nyonya cuisines. At the elegant National Gallery Singapore outlet, she has prepared a menu of her greatest hits, from the humble kueh pie tee (julienned vegetables stuffed in crisp pastry shells and crowned with fresh prawn and a dollop of chilli paste), to beef rendang painstakingly prepared by braising beef shin for hours in coconut gravy made tastier with a concoction of spices, kaffir and bay leaves.
