In many ways, chef-owner Petrina Loh’s love for fermentation has inspired more than just the eclectic food served at Morsels. Decked with jars of ferments, sustainability is built into the core of this tiny repurposed barnyard cottage, which gives off a homely and rustic atmosphere—the perfect place to indulge in Loh’s simple yet innovative plates. Take the Fjord trout tartare, which is imbued with creaminess through its Alabama white sauce—necessary for pairing with belinjo crackers, a classic Indonesian snack. Elsewhere, pidan pork dumplings drizzled with vinegar and mushroom chilli oil serve up nostalgic, classic flavours, while the preserved lemon tart challenges sweet and safe desserts with the intense saltiness and acidity of the preserved lemons.
