Thirty years after being one of the first restaurants from Hong Kong to open in Singapore to great fanfare, Lei Garden Singapore has stayed on top of its game. The interiors are modern European, save for the floor-to-ceiling tanks of live sea creatures. No surprise, Lei Garden excels in its seafood and soup dishes. While the menu features a variety of broths, opt for the daily special: a richly nourishing brew of dried figs, Buddha’s hand melon and pork. The crispy roast pork cubes are covered in a layer of crunchy crackling as promised, but there are several other gems such as the uber-silky and gelatinous braised goose web with mushrooms and tofu skin, and sautéed beef and foie gras cubes with spring onions. For desserts, don’t miss the signature mango, grapefruit and sago soup, which launched the trend in Singapore decades ago, and the almond cream with egg white. Service is polished and dishes are adequately spaced out.
The wine list doesn’t scrimp on top-growth Lafite Rothschild and Cristal champagne, but with a limited selection in general, it might be worth bringing your own bottles. The premium tea selection is also impressive.
