The chilli crab 10.0 captivates with its audacious pairing of cold chilli-tomato ice cream, custard apple and pan chino, creating an explosion of flavours that lingers on the palate. Meanwhile, the fish milk soup takes diners on a sensory voyage, with fish noodles, gamtae and myoga ginger orchestrating a meticulous balance of textures and tastes. Chef LG Han’s bak chor mee also undergoes a gourmet metamorphosis with Hokkaido scallop, pork textures and engawa, showcasing his skill in elevating local street food. To conclude, the dessert of kaya, teh tarik and eggs, is a spectacle, adorned with caviar for a savoury-sweet finale that pays homage to local favourites.
