Established in 2014 by banker turned self-taught chef LG Han, Labyrinth operates as a playground for his inventive takes on Singaporean dishes, such as the chilli crab (made with softshell crab) and the Hokkaido scallop bak chor mee—both of which are served as starters and have since become mainstays. First-timers to Labyrinth should opt for the “classics menu”, which features contemporary takes on traditional local favourites. One bite puts a smile on the diner’s face, regardless of whether or not they’re familiar with the Singaporean dishes being referenced. Those who are more adventurous can dive straight into the comprehensive “tasting menu”, which offers eight dishes, each given a novel twist.
