This kaiseki restaurant serves food that’s dependent on the seasons. Ingredients are at their prime—such is the amuse-bouche of the freshest uni that dissolves in the mouth; it’s served with tofu skin in a gelatinous sauce made with mirin, sake and soy sauce. It sets the standards high and for the most part, the team sustains it with a succession of delicious creations—prawns crowned with ikura, tuna served sashimi-style or marinated in soy sauce, and pan-seared kinmedai with sake and yuzu notes.
