Italian meets Japanese on the top floor of the Hilton Singapore

 

Under the new management of Voco Orchard Singapore, Il Cielo has emerged as a more leisurely Western restaurant perched atop the hotel’s sky deck swimming pool on level 24.  Decked out in modish Mediterranean hues, this small restaurant with less than 10 tables opens up onto the pool deck sky bar, making it an ideal venue for sunset dinners. Tasked with reinventing the offerings, Venetian chef Marco Fregnan has assembled a menu featuring familiar Italian and Western favourites—there is even a section that specially focuses on fresh burrata from Puglia. Some standouts include: the fritto misto, a dish that Fregnan does supremely well with his light batter and choice of seafood; Angus tartare pizza; and a deceivingly simple but luscious cacio e pepe. Ask the very enthusiastic manager and sommelier for excellent wine pairing suggestions. For a not-too-sweet ending, the panna cotta alle nocciole has the right balance of crunchy hazelnut praline and citrusy marmalade.
