A stalwart of Singapore’s fine dining scene, restaurateur-sommelier Ignatius Chan’s eponymous restaurant continues to evolve dynamically, serving longtime fans and winning new ones even as it reaches its 20th anniversary. Iggy’s warm and friendly personality together with his extensive 25,000-strong wine list, draws many of Singapore’s oenophiles, experienced and new, with bottles for every budget and preference. Chef Jake Lee heads up the young kitchen brigade to serve thoughtful, creative and delicious modern European cuisine with touches of Southeast Asia and Japan. Japanese hirame (olive flounder) and Inaniwa udon are served with leche de tigre (tiger’s milk) for a refreshing and appetising starter. Steamed green wrasse is married with Japanese soramame beans, Tuscan kale, and sweet prune beurre blanc for an incredibly light yet satisfying main course at lunch.
