Opened in 1992, a steady stream of diners continues to be drawn to Hua Ting’s broad repertoire of classic and modern Cantonese dishes, which it prepares with time-honoured finesse. Its elegant setting was refurbished and unveiled in December. Among its most popular dishes is the crispy roasted duck, which has much of the fat rendered off to yield crispy, caramelised skin and juicy, tender meat. Seasonal dishes bring out the best of the fresh produce available, prepared in myriad cooking styles by an experienced culinary team helmed by master chef Chung Lap Fai. Service is cordial and attentive, with the assigned waitstaff adept at recommending dishes to suit almost every palate and dietary preference.
• Ask for popular dishes that aren’t on the menu—these include the Japanese wagyu beef and the wild mushrooms with black peppercorn served in a hot stone pot.
