It’s exciting to discover young chefs under the age of 30 as talented and daring as Piedmont native Matteo Ponti. From the first artistic plate that comes our way, it’s evident that the cuisine here gives the expansive views of Marina Bay some serious competition. While the Italian menu features predominantly European ingredients, chef Ponti doesn’t shy away from using a few high-quality local and regional ingredients, such as mango and passionfruit, to accompany the Sicilian red prawn carpaccio, that’s topped with Kaluga Queen Schrenckii caviar from China and sea urchin from Hokkaido. Other highlights include a Piedmont-style veal tartare that’s less sharp and tangy than its French cousin, and matches well with the buttery, less intensely salty caviar. The sweet Bangalow pork tenderloin from Australia with house-made pickled Tropea IGP spring onion and fig chutney, and the peppermint tea-brined lamb loin with Taggiasche olives and artichoke cream, are among the standout main courses.
