Flutes is a reliable European restaurant serving up elegant food, made with fine ingredients and presented exquisitely but without pretension. Each dish is seasoned and cooked to perfection, such as the Glacier 51 toothfish, which melts in your mouth while maintaining its firm integrity. It’s complemented by the sweetcorn foam it sits in and elevated with a dash of harissa. Another highlight is the Futari Wagyu striploin, served in a red wine jus and beetroot done two ways—marinated in red wine vinegar and sugar, and roasted—adding a wonderful earthy sweetness to the perfectly seasoned beef.
