Irish chef Andrew Walsh’s cuisine has evolved over the years to encompass not only his experiences in restaurants of good standing in some of the world’s largest cities, but also a reflection of his personal experiences and memories. Thus, meals at this dark-hued dining room with Instagram-friendly lighting begin with a lovely procession of snacks such as duck liver Linzer cookies that resemble Jammie Dodgers, a quintessential element of any Irish childhood. The years have also seen Walsh embrace more Singaporean produce and influences, which are parsed into dishes such as the Citizen Farm caesar salad with homegrown tarragon, purslane and wood sorrel, as well as tendrils of tender squid noodles swimming in a laksa broth.
