Perched atop the Marina Bay Sands Hotel, Cé La Vi boasts panoramic views of the marina bay and is one of the iconic places to visit on the island. The kitchen is helmed by executive chef Joey Sergentakis, who serves up modern Asian cuisine that’s complex, visually appealing and delicious. Start with the Hokkaido scallops and oyster ceviche; the appetisers wake up the taste buds with a burst of tanginess from the calamansi, lemongrass oil and pomelo. Exclusively sourced by the restaurant is the Rangers Valley Black Market rib-eye, which is grilled to tender, smoky perfection before it’s plated with sweet potato noodles and kimchi for an Asian twist. This dish goes well with a full-bodied red wine; diners can choose from a wide range of wines available by the bottle and by the glass, spanning different regions. There’s always a sommelier on hand in case you need help with the pairings, too. The overall service is also top-notch.
• DJs spinning the latest tunes are a great accompaniment to dinner, but don’t stop there—head to the bar after dinner to join in the music and drinks.
• The restaurant provides a good vantage point to catch the fireworks display during festivities such as the Singapore Grand Prix and National Day.
