A trip to Botanico feels like stepping into a secret garden within a garden where a gastronomic journey awaits, as the restaurant is set within the lush grounds of the Singapore Botanic Gardens, a UNESCO World Heritage Site. Asian influences such as the use of ginger flower, lemongrass and tamarind are evident in many dishes. For example, the assam laksa ceviche comprises thin slices of seabass with green chilli, pomegranate and shaved ginger flower, and is served with tamarind-dressed glass noodles and shrimp-paste ice cream. Putting a modern spin on the classic rice roll is the Iberico chee cheong fun; it’s stuffed with barbecued pork belly, glazed with ginger soy and served with pickled cucumber for an amalgamation of delicious flavours. Beef lovers will enjoy the Wagyu beef cheek, braised in a zingy lemongrass broth and glazed with caramelised soy before it’s decked with Asian pesto, barley risotto, spicy papaya and apple salad.

For those adventurous enough to attempt a DIY drink, there’s a wonderful selection of base spirits, mixers and garnishes for creating your own cocktail carafe.
