British-Sri Lankan economist-turned-restaurateur and cookbook author Cynthia Shanmugalingam calls Sri Lankan food “one of the world’s most unsung cuisines”, and I would have to agree with her after my own trip there this past May. From the delectably spicy black pepper crab of Colombo to the aromatic teas of the Central Highlands, and the fleshy tuna down on the south coast of Galle, the island of Ceylon is a veritable jewel box of flavours that has arrived in its current form after a tumultuous and colourful history.
