In this fast-paced era, it is not easy to keep the masses interested in anything for long. But Leon Foo has managed to keep his coffee company Papa Palheta alive and, more importantly, relevant for the past nine years. Driven by the goal to “sell better coffee and sell coffee better”, the 35-year-old, who is a pioneer of Singapore’s third-wave coffee culture, is constantly innovating his roastery, coffee bar and educational workshops in order to connect more people with the beans and the brews. Another conversation he hopes to spark is around “sustainable food consumption as well as traceable and ethical sourcing”.
