Working with one’s best friend has its challenges. Raj Datwani claims to have almost been punched by his business partner Alex Chew while the two were debating the inclusion of chicken rice in their restaurant Bacchanalia’s first menu. However, the New York-born director of AR Restaurant Group and executive producer and partner of electronic dance music festival, Ultra Singapore, also credits their like-mindedness and trust in each other for giving life to their bold visions. With the second edition of Ultra Singapore out of the way, the 35-year-old will be focusing on expanding the duo’s members-only executive business lounge, Madison Rooms, to Southeast Asia and delivering new culinary experiences with new head chef Luke Armstrong at one-Michelin-starred The Kitchen at Bacchanalia.
