T.Dining celebrated another edition of the Tatler Table at Alba 1836, where Singapore Tatler's gourmand friends, GenT-ers and industry leaders feasted on sumptuous northern Italian cuisine paired with fine Italian wines from the same region. Welcoming the likes of Nada Jumabhoy, Stephanie Lee and Celeste Basapa was owner Matteo Trabaldo Togna, who shared how they wanted to create a special menu that was representative of this region, known for its creamy, rich dishes and heavy use of butter. Highlights included the wild mushroom veloute topped with a slow-cooked egg that added to the luscious mouthfeel; aromatic saffron risotto cooked nicely al dente and crowned with smoked caviar and Mediterranean sea urchin; and the fork-tender beef tenderloin cooked “Milanese style” and accompanied with potato puree and cherry tomato confit. The wine pairings also delivered with exquisite picks such as the Gattinara Paride Iaretti and the Marchesi di Barolo Gavi.
