After being starstruck at a flamenco performance four years ago at her mother's 80th birthday in Lugano, Switzerland, Dolores Mantegazza and best friend Sandra Cheng vowed to bring what they saw back to Singapore. And so they did! After friends and family arrived for cocktails and canapes, the Flamenco Ballet troupe, having flown in from Andalusia, Spain, performed extracts from “Carmen by Bizet” and “Flamenco Suite”. Afterwards, guests were ushered to the Spanish Fiesta Piazza for a feast arranged by Diederik Brinkman, Sandra's brother-in-law, and prepared by Chef Sandro Falbo. Carving stations served marinated chipotle OP beef ribs with toro wine sauce, slow baked rock salt salmon with cava sauce while dessert carts were full of apple calvados cake, freshly baked apricot cherry streusel and honey fountain with churros.
