Few restaurants can top the view at Zafferano. Perched on the 43rd storey of the Ocean Financial Centre, the Italian restaurant, bar, and lounge boasts stunning views of the Marina Bay waterfront. With newly appointed Head Chef Fabio Cucchelli at the helm, the menu echoes that of authentic Italian cuisine. Here, Cucchelli amps up traditional Italian flavours to please the palate of the Singaporean diner. It’s a delicate undertaking that toes the lie on tradition, but Cucchelli, who previously inked a stint at Thomas Keller’s three-Michelin-starred French Laundry, pulls it off with finesse.

Raised in his father’s butchery, Cucchelli certainly knows his meats. It follows that his ossobuco throws the spotlight on fork-tender veal shin braised in red wine. The accompanying pilaff rice, studded with toasted pine nuts and raisins, soaks up all the flavours of the beast. He also works his magic with ravioli, filling it with creamy burrata before resting it on a bed of tomato passata and roasted tomato confit.
