With fingers crossed, we’re all waiting for dine-in restrictions to be lifted on June 21. And just because we have come so far from the increased safety measures during Phase 2 (Heightened Alert), we deserve a drink or two on our last week of staying home. Classic cocktails here are given a new dimension with barrel ageing, where the elixir spends time in a cask to heighten notes of vanilla or coconut (depending on the wood barrel used), soften the harsh alcohol taste and bind all the flavours together.
