Taste the freshness of the sea at these popular establishments offering a variety of these bivalves

National Oyster Day falls on August 5 but here in Singapore, we can celebrate it early thanks to Greenwood Fish Market bringing back its much-awaited World Oyster Festival this month for the ninth year running. That is not the only establishment to savour these treasures of the sea, as our tiny island boasts a number of oyster bars that source these molluscs from all over the world. Take your pick between db Bistro & Oyster Bar or Angie's Oyster Bar, but if you prefer to enjoy them at home, opt for the Oyster Mobile Bar which delivers them to your doorstep. Last but not least is Maison Marie, a grocer-bistrot that brings to the table fresh oysters that mostly come from France. Tuck into the freshly shucked ones or enjoy them topped with cheese and miso saikyo, then josper-grilled to a delicious finish.

1. Greenwood Fish Market

The seafood restaurant has been celebrating World Oyster Festival for nine years, and for this year’s edition (which runs from July 1 to 31), it is bringing in 26 varietals of live oysters sourced from around the world. New choices include Fat Bastard and Shigokus from the US, and both are famed for their clean taste, while Pink Moon from Canada is coveted for its salty notes and sweet finish.

“Tasting oysters side-by-side is eye-opening,” shared chef Alan Lee, so the molluscs are available à la carte and in tasting platters comprising eight varieties curated by Lee himself. The event runs from July 1 to 30 and the offerings are available for dine-in, takeaway and delivery.

2. Maison Marie Bistrot

This European bistro and fresh market is an epicurean's haven for premium ingredients and fresh produce—oysters included. These are flown in every week from regions such as Normandy and Nouvelle-Aquitaine in France, and options include the likes of Fine de Claire, Gillardeau, Isigny Sur Mer and Breuil Utah Beach. Enjoy these with a squeeze of lemon or a dash of house-made mignonette at the raw bar, or better yet, try chef Calvin Tan’s cooked version which sees these bivalves topped with Gruyere cheese and miso saikyo and josper grilled for a delicious finish.

3. db Bistro & Oyster Bar

Celebrity chef Daniel Boulud’s love for seafood is reflected in his Parisian bistro at Marina Bay Sands. Here, you will find an impressive selection of oysters hailing from the pristine oceans from the North Atlantic all the way to the South Pacific, and displayed at the majestic raw bar. Options include the brackish Fine de Claire from Brittany, France; sweet and creamy Eagle Rock from Washington, USA; and rich and plump Carlingford from Galway, Ireland. To ensure their freshness daily, the team handpicks three to four daily specials and keep them in perforated pans covered with crushed ice at zero degrees. These are only shucked upon order and served with lemon slices or mignonette. Drop by between 2pm to 5pm on weekdays and enjoy these at 50 per cent off or with 1-for-1 beers and selected wines at discounted prices.

4. Angie's Oyster Bar

Another popular destination for oysters is Angie's Oyster Bar, which offers them at special prices during Happy Hour (5pm to 6.30pm). Choose from the daily specials which may include the salty and briny, Fine de Claire, sweet and salty Kelly Irish Gigas, and slightly nutty Spéciales Isigny—all sourced from the pristine waters of France.

5. Luke's Oyster Bar

Chef-owner Travis Masiero has been running the restaurant for more than a decade, and continues to source his seafood such as oysters from his trusted suppliers located along the Eastern Seaboard of America. “I can assure you that these are the very best oysters the world has to offer,” Masiero stated on the website, and you will a mouth-watering selection such as Barnstable and Pleasant Bay. Both are from Massachusetts—the former is a delicate balance of fresh and sweet, while the latter has a delectably clean finish. Have them at the restaurant or opt for the Mobile Oyster Bar, which brings the seafood to you.
