1. Golden Peony

Just as its name implies, the newly-launched Discovery Menu lets you ‘discover’ the restaurant’s signature dishes by curating your own meal. Drop by for dinner and choose the six-course set which consists of the culinary team's signatures.

Highlights include the appetiser of crispy roasted pork belly and impossibly tender ‘char siew’ lacquered with honey soup plum for extra decadence; and the main course of fork-tender Wagyu beef cheek enriched with red wine sauce and a sprinkle of spring onions. Dessert is a classic combo of mango puree, sago and pomelo presented as a chilled fruit pudding. Book here.

2. Adda

Chef Manjunath Mural, formerly of one-Michelin-starred The Song of India, returns to the scene with Adda restaurant on Beach Road. Here, he serves popular Indian dishes from north to south which are presented with modern twists. Take, for example, the vegetarian Bollywood Burger sliders that pique the palate with its medley of spicy roasted mushrooms offset by the pickled radish, onions and cucumber, and sandwiched between fluffy beetroot-infused buns.

From Mural’s signatures, you have the glorious butter chicken pot pie presented with much flair in a claypot sealed with a flaky pastry. The staff serve it by cutting open the pastry to reveal the deliciously rich butter chicken curry inside. Don’t skip desserts; the traditional gulab jamun, which tends to be overly sweet, is remade into a cheesecake for the right balance of sweet and creamy. Book here.

5. Braci

Spring has inspired chef de cuisine Mirko Febbrile to create the restaurant’s first tasting menu for the year. There’s much to savour, including the white asparagus bathed in milk and glazed with a smooth butter sauce to enrich the flavours, then decorated with strands of bottarga, salsa verde and nero di seppia sauces. Another standout dish is the Topinambour, where a silky smooth sunchoke puree is crowned with home-cured sardines and charcoal-smoked Alaskan king crab. Book here.
