Guest chef Patrick Chan will recreate 30 dishes that have shaped the fine dining restaurant’s claim to culinary excellence.

Everyone’s got their chopsticks in a twist over the dim sum creations from one-Michelin -starred Tim Ho Wan — but it is certainly true that good things come to those who wait. From 9 to 13 April, Head Chef Patrick Chan will depart his homebase, two-Michelin-starred Cantonese fine dining restaurant Zi Yat Heen at Four Seasons Hotel Macao, to helm the kitchen at Summer Palace in Regent Singapore. It is here that Chan will recreate 30 dishes, of Michelin-starred pedigree no less, that have shaped Zi Yat Heen’s claim to culinary excellence. Imagine the pristine flavours of scallop teamed with a fresh bite of apple, or osmanthus lending its fragrance to fried eel — a refreshing departure from the flower’s staid appearance in dessert. A less-is-more approach is seen with the pairing of cumulus-light egg white with sweet, sautéed lobster, while gilded-accents lace the menu with the likes of chilled bird’s nest in a coconut milk pudding.
