The Lighthouse at the Fullerton Hotel is a pared-down yet stylish Italian restaurant that seats just 52 patrons at the former San Marco. In the 18th century, a beacon stood at this exact location to guide the world's mariners to the safety of the Singapore port. Today, a private lift welcomes diners into the restaurant swathed in beige and orange, overlooking the waterfront and the Esplanade.

Helmed by Chef de Cuisine Diego Martinelli, who specialises in contemporary Italian fare, diners can expect subtle, yet quintessential Italian flavours such as the tender grilled suckling pig cheek accompanied with the refreshing, piquant taste of the green apple compote. The handmade tortelloni stuffed with duck and mascarpone cheese is flavourful and fills you up pretty fast. If you prefer something lighter, opt for the delightful butternut squash tortellini instead. Good risotto can be found in Isolana, the heart of Verona's rice-growing district, and the Isolana-styled risotto here is cooked with rosemary, cinnamon and accompanied with bits of fresh pork sausages.
