Laurent-Perrier’s Grand Siècle champagne is a fantastic match with a variety of cuisines, says OSO Ristorante's Diego Chiarini

It has been said that nature alone cannot provide the perfect wine producing year, which is why lovers of fine champagne appreciate the mastery involved in creating a blend that combines the best vintages to craft something extraordinary. Such ethos is epitomised in Laurent-Perrier’s Grand Siècle, which comprises three of the house’s most exceptional vintages, expertly selected for their complementary profiles.

The result is a delicious balance of freshness and subtle effervescence and fruity flavours with delicate aromas of honey, hazelnuts and baked pastries. The same qualities, which include good complexity and firm acidity, makes this prestige cuvée an ideal pairing with a wide variety of cuisines—and, in particular, with refined Mediterranean fare, says OSO Ristorante’s chef-owner Diego Chiarini, who is clearly an admirer of fine French bubbly and the “sexiness” it brings to the table.

This unique love affair is not surprisingly also evident in the making of Grand Siècle, which is a marriage of chardonnay and pinot noir grapes. Assembled from 11 of 17 chardonnay and pinot noir grand crus, the blend is extensively aged before being made available on the market.

“We in Italy really love champagne—we like beautiful things,” Chiarini declares, while affirming the beauty of the Grand Siècle. “And you don’t want to drink it too fast, because you want to appreciate the moment.”
