The chef-owner of the famed Odette will work with Petrus’ resident chef de cuisine Ricardo Chaneton to create a tantalising menu, available for two nights only.

Celebrated for creating dishes that preserve flavours and textures with masterful techniques, chef Julien Royer of Singapore’s Odette will be heading Hong Kong this December for a two-day gastronomy showcase at Restaurant Petrus at Island Shangri-La in Hong Kong. The acclaimed chef will collaborate with the restaurant’s own chef de cuisine Ricardo Chaneton, creating an eight-course dinner tasting menu.

On evenings of December 15 and 16, chef Royer will join hands with chef Chaneton to create dishes with best-quality ingredients. The eight-course ocean-themed set dinner menu will showcase vibrant courses such as:

- Hokkaido uni, scallop tartare, oscietra caviar
- Langoustine, Jerusalem artichoke and bergamot
- Crispy-skinned kinki, charred pork belly and miso caramel
- Abalone, veal tendon and sticky yuzu sauce
- Sea lettuce with white chocolate textures

The Julien Royer–Ricardo Chaneton collaboration menu is available during dinner service on December 15 and 16.
