Jigger & Pony is dedicated to reviving classic cocktails that have since been forgotten.

Too often we see cocktail bars focusing on slick marketing and experimental tipple. However at Jigger & Pony, the focus goes towards creating the perfect cocktail and even reviving classics that have since been forgotten.

The beverage menu has 24 cocktails that are divided up amongst Classics, Forgotten Classics and Modern Twists. The jovial bartenders use only traditional Japanese bartending techniques that are often painfully meticulous. For instance, should you order a single malt whiskey, the ice that your cocktail is served with is painstakingly hand carved into a sphere.

If you happen to have come at a busy hour, be prepared to wait for your drink. The folks at Jigger & Pony don't believe in sacrificing their eye for detail in exchange for a quick sip. The bartenders refuse to use pre-made juices or concentrates and they create their own infusions, such as strawberry infused tequila and grenadine syrup made with fresh pomegranate.

"We want our customers to enjoy really good drinks concocted with excellent techniques," says head bartender Anthony Zhong. "Every small detail in the cocktail making process can affect the taste of the final product and when it comes to classic cocktails, there is so much history at stake."
