The bartenders have crafted inspired concoctions using the ice cream brand's limited-edition Lime Mojito Sorbet and Piña Colada flavours

Häagen Dazs has launched its latest range of alcoholic tropical ice cream flavours in time for spring, and the brand is celebrating it by teaming up with Singapore bars to offer indulgent cocktail-meets-dessert creations from April onwards. 

The spotlight is on the limited-edition Lime Mojito Sorbet and Piña Colada flavours, and over at Potato Head, head bartender Gavin Teresavan and crew have created the La Piña Affogato. It’s as refreshing as you imagine it to be, given that it’s piña colada ice cream mingled with house-made calamansi and pineapple rum reduction. And for a burst of sweet and tangy flavours, it's topped with baked coconut butter oat crumble.

IB HQ bartender-owner Kamil Foltan got into the action, too, with his innovative ice-cream cocktails. A new take on the popular mojito is Tafia, made with freshly-squeezed yuzu and sparkling sake, and for extra indulgence, is topped with a scoop of Lime Mojito Sorbet.

Another inspired offering is his Smokey Pina Colada, which is essentially a deconstructed piña colada. It's a medley of lapsang souchong-infused rum, longan honey and fresh lime juice that's served in a teapot and poured tableside over three scoops of piña colada ice cream.

For more delicious choices, you only need to head over to Sofitel Singapore City Centre’s 1864 lounge for a selection of ice cream cocktails as well as desserts. The team has updated classic recipes such as Mojito and Old Fashioned to bring you Martino Mojito and Old Fashion Conversation. The former is a delightful mix of Bombay Sapphire gin, Blanco Vermouth infused with rosemary and topped with dehydrated lime. Served with a side of Lime Mojito Sorbet for good measure.

Equally delicious, the latter is a classic blend of Michter's American whiskey, syrup, Angostura bitters and dehydrated orange. Its intense smoky notes are offset by the  sweetness of the rum & raisin ice cream. To complement the drinks, the pastry team has also created the lemon tart topped with piña colada ice cream.

Last but not least is Swissotel Merchant Court’s enticing beverages and desserts, available at its riverside kiosk. One of the must-tries, especially in this hot and humid weather, is the Apple Crumble Cider Float made with apple crumble and cider, and stacked with a scoop of ice cream. Or, better yet, have the Aperol Spritz Float which is made with the usual Aperol and spritz but accented with strawberry ice cream.
