1. Osteria BBR by Alain Ducasse

Tatler Asia

Chef de cuisine Natalino Ambra has curated a new Sunday brunch experience that puts the spotlight on delectable Italian creations paired with bottomless servings of wines, cocktails and champagnes. As all Sunday brunches go, get the party started with freshly shucked Antilope oysters and fresh Hokkaido scallops complemented with pink grapefruit. These are enough to whet the appetite for classic Italian creations like the uovo strapazzato, a hearty dish of scrambled eggs crowned with creamy sea urchin and caviar; and filetto di manzo, succulent Black Angus beef tenderloin paired with celeriac and aromatic truffle beef jus. Seafood dishes are available, too, like astic, or juicy Maine lobster bathed in a velvety smooth bisque sauce. End the meal on a sweet note with classic Italian creations;  the mousse al cioccolato comprises rich chocolate mousse accompanied by homemade buckwheat ice cream.

2. Chef’s Table by Chef Stephan

Chef Stephan Zoisl treats our palate with his latest plant-based ‘From the Field’ omakase menu. The menu puts the spotlight on local and overseas produce such as green zebra tomatoes, Japanese maitake mushrooms and green asparagus. While the menu changes on a regular basis, depending on the season, anticipate offerings like the celeriac and ramson, earthy celeriac puree and pickled ramson; and rich asparagus risotto. These dishes are best had with a glass or two (we won’t judge) of wine, and restaurant manager and sommelier Manoj Jaiswal has scoured wine regions like Austria, France and Italy to discover the best pours.
