This week is the week for good Chinese food—if you’re looking for a good hotpot, head down to Si Chuan Dou Hua at Beach Road for a taste of its new mala butter hotpot with premium ingredients. If not, esteemed Chinese restaurant Madame Fan is offering a new à la carte menu that will please the senses.

Go on to feast on two exciting collaborations this week—the first is at Oumi, which is presenting a Nikkei-Kappo omakase menu with Flnt; the second is at Una, which is bringing the warmth and flair of Spanish and Argentinian cuisine to the table. End the week by tasting the best Spanish wines from the Ribera del Duero region at Alma by Juan Amador, alongside an innovative contemporary menu.

1. Madame Fan

Executive Chinese chef Pak Chee Yit has introduced new à la carte dishes that feature classic and contemporary culinary techniques and flavours. Look out for creations like the smoky Lishan oolong mala quail eggs that see perfectly cooked quail eggs marinated in a fiery mala sauce and smoked with aromatic oolong tea leaves. The result is a fiery bite with smoky and earthy flavours. Don’t miss out on the kampong chicken served in two courses: a hearty chicken soup and hand-shredded chicken. The dish features a kampong chicken simmered over low heat for over four hours until beautifully tender. The aromatic soup is served with cordyceps flower and bamboo pith, while the second course sees the same chicken hand-shredded and tossed in a refreshing vinegar ginger sauce.

2. Alma by Juan Amador

Savour the best wines that Spain has to offer at Alma. On May 10, Bodegas Arzuaga wines from the famed winemaking region of Ribera del Duero will be excitingly paired with Alma’s brand of Asian-inspired contemporary European cuisine. A fish ballotine with black cod, carabineros, and daikon, for instance, is paired with an Arzuaga Fan D’Oro Blanco 2020, a crisp chardonnay with a sharp acidity rounded off with floral notes. In another pairing, a luxurious Satsuma A4 striploin in purple curry, asparagus, coconut and mango is served with an Arzuaga Reserva Especial 2017 and an Arzuaga Gran Reserva 2016, fuller-bodied reds that meets the bold flavours of the premium striploin.

3. Si Chuan Dou Hua

Mala hotpot lovers will rejoice at Si Chuan Dou Hua at Parkroyal on Beach Road, where master chef Dave Lai has crafted a signature Sichuan-style mala butter hotpot. Infused with traditional Sichuan spices and presented in a showstopping pot, the broth is beautifully nutty from the butter without ever being overpowering, making it dangerously addictive. 

You will be treated to premium hotpot ingredients such as a 150-gram lobster, 8-head abalone, Australian Wagyu beef, and Japanese Kurobota pork to elevate your hotpot experience. Don’t like spice? You’ll still have incredible homemade broths on offer like the double-boiled king garoupa broth, as well as the double-boilled imperial fish maw broth that’s intensely flavourful and rich in collagen. 4. Oumi

Head down to Oumi for an exciting collaboration with Flnt on the 51st level of CapitaSpring. From now until May 14, Flnt will be bringing its Japanese-Peruvian Nikkei flair to Oumi’s refined Kappo cuisine, making for a harmonious blend of flavours in an exclusive omakase menu. A yellowtail ceviche, for instance, is prepared with leche de tigre (a Peruvian fish marinade), yuzu, white corn, shallot, coriander, hazelnut, and tortillas for a welcome burst of fresh acidity to whet your palate. Choose between a luxurious Iberico pluma with an achiote sauce (made with annatto seeds), and Aomori and Japanese black garlic, or an impossibly tender grilled miso cod with aji verde (Peruvian green sauce) and shishito peppers.

5. Una at the Alkaff Mansion

Another riveting collaboration is in store at Una, which is joining hands with Fire to present a bold mix of Argentinian and Spanish flavours. The pop-up, available from now until May 14, is perfect for sharing with friends and family with the Fiesta Del Asado communal menu. Starters like the bomba de patata, a fried Spanish potato ball stuffed with chicken, are crispy and addictive, as are mains such as the suckling pig cochinillo served with a luscious pork jus. A churros con chocolat, a classic Spanish breakfast, is served for dessert and elevated with 72 per cent Valrhona chocolate, caramalised nuts, and cinnamon orange sugar for a delightful zest.

If you’re looking for a more intimate meal, however, the pop-up has you covered as well with its à la carte menu featuring Spanish paellas like the indulgent squid ink paella, as well as wood-fired Argentinian grain-fed cuts of beef that will satiate your steak cravings.
