1. Si Chuan Dou Hua

Tatler Asia

Make your way to Si Chuan Dou Hua and indulge in unlimited servings of flavourful Peking duck with its Deep Duck Secrets set menus. Highlights of the menu include Ipoh hor fun soup with shredded duck meat and preserved vegetables; traditional braised duck with ginger and preserved bean curd; and ‘chong qing’ diced chicken with mala dried chilli. The latter is a crowd favourite and consists of juicy chicken chunks deep-fried to golden brown and stir-fried with chilli, for an additional spice kick.

Of course, the star of the show is the roasted Peking duck prepared by roast master chef Meng Xue You. Here, the poultry is first cleaned and scorched in boiling water, tightening the poultry’s skin before it is splashed with maltose and air-dried for four hours. When it’s ready, the duck is then roasted until golden brown and skilfully carved by chef Meng himself. Available from now until May 31. Book here.

2. Preludio

Tatler Asia

Embark on a gastronomic voyage at Preludio with chef-owner Fernando Arévalo’s Author’s Cuisine. The recent menu pays homage to Arévalo’s Colombian-Italian heritage and life experiences. The Complete Experience menu begins with Caldo de Costilla, a flavourful beef rib soup featuring beef consommé, chervil root puree and coriander. For mains, savour Arévalo’s elevated take on Ajiaco, which is arguably the most famous dish in his home city of Bogota, Colombia. The creation sees succulent Bogota chicken breast marinated in Japanese corn and butter, and served in hearty Bresse chicken broth and sliced avocado. Save room for dessert; the feast ends with a scoop of creamy milk ice cream topped with passionfruit, strawberry and opal chocolate. Book here.
