1. Ma Cuisine

Poulet de Bresse Rôti

It’s always a good idea to include roast chicken in your feast, and chef-owner Mathieu Escoffier’s version features premium Bresse chicken brined in a mix of salt, water, soy sauce and olive oil for 36 hours. This ensures flavours are infused down to the core.

It’s roasted for 25 minutes and left to rest for another 25 minutes to ensure it has succulent meat and extra-crisp skin. Escoffier serves it with pan-seared foie gras “to enhance the taste and give extra texture” and recommends having it with champagne. Additional sides such as macaroni and truffle and organic carrot puree are available separately, and orders should be placed at least one day in advance.

Roasted Lamb

How about a roasted lamb as the centrepiece of your Easter Feast? The culinary team’s version features the joint marinated for 24 hours in a concoction of rosemary (from their rooftop garden), organic garlic, parsley, sea salt and freshly-cracked pepper. Once the beautiful flavours are infused down to the core, it’s slow-roasted for six hours to render the meat fork-tender before it’s cooked on the grill for a smoky and crisp finish.

The roasted lamb comes with roast potatoes, Yorkshire pudding and homemade gravy, but you have the option to include more side dishes such as roasted baby carrots with brandy butter and sesame seeds; charred brussel sprouts with smoked bacon and maple butter; and baked cauliflower cheese with gruyere and bechamel. Orders should be placed at least one day in advance.
