What started out as a local brewpub in 1997 has since expanded in Singapore to become a trusted F&B brand operating its own craft brewery and restaurants across the country. Its latest outlet is located at One Fullerton and consists of an indoor dining area and al fresco terrace, which looks out to the expansive Marina Bay. Admire the scenery while tucking into a Western- and Asian-inspired menu, prepared with local and sustainably sourced produce.

Dishes range from the sakura shrimp pasta featuring sakura ebi and sobrasada (cured sausage) from Spain to the braised short ribs accompanied by wasabi kale. The restaurant serves modern Japanese fare amid a backdrop of the Marina Bay. Must-haves include the Golden Age roll, filled with the fresh flavours of salmon and mango, snow crab century-egg tofu doused in a rich, creamy sauce; and Wagyu garlic teppanyaki, which features a juicy pink steak with garlic sauce and chives. After the meal, guests are encouraged to indulge in their East-meets-West drinks at the rooftop bar, which offers an even better vantage point of the bay.

Located on the top level of Marina Bay Sands—57 stories high to be precise—Lavo boasts a view of Singapore’s skyline like no other. Signature dishes of the rooftop Italian-American diner include the Lavo meatball (a mixture of fresh ground Wagyu beef, veal and Italian sausage with a dollop of ricotta cheese), classic chicken parmigiano and charred octopus. Making for a sweet and decadent ending is the 20-layer chocolate cake, comprising layers of chocolate, peanut and mascarpone.

Monti’s expansive windows allow it to be bathed in natural light by day, and provide diners a relaxing panorama of Collyer Quay to enjoy with their meal. Come dusk, the rooftop offers a privileged view of the sunset, best enjoyed with aperitifs at hand. Diners can look forward to the restaurant’s authentic Tuscan-Italian cuisine, and the chef’s omakase menus are worth considering here. If à la carte is preferred, a must-order is the hefty Mayura full-blood Wagyu T-bone, which is great for sharing. The pan-seared Hokkaido scallop and house-made ravioli are two of the other dishes not to be missed.

Tuck into a feast of mod-Asian cuisine in this restaurant, which is bathed in the ethereal blue glow emitting from the floor-to-ceiling aquarium. The restaurant’s menu is regularly refreshed to present the season’s freshest produce, but one thing is consistent—its strong commitment to sustainably sourced seafood. Riviera Forlino sits elegantly within One Fullerton, which means you’ll dine at this restaurant with a backdrop of the Marina Bay waterfront and Merlion Park. Take in the scenery as you feast on its modern Mediterranean fare that celebrates influences from France and Italy, as well as hints of North Africa. Executive chef Rémy Carmignani and executive pastry chef Nicolas Vergnole also recreate nostalgic dishes from their childhood, using the freshest consciously sourced produce. Must-tries include Rémy’s dish of wild-caught New Zealand langoustine, inspired by his grandmother’s Langoustine à l’Américaine and handmade tortellini served with traditional Moroccan Tangia-style lamb shoulder. Offering a slice of Bali in Singapore is Rumours Beach Club, located in buzzy Siloso Beach. Here, guests can have a meal by the pool while soaking in the beach vibes. While the extensive menu includes all-day bar bites and Western fare, the central attraction is the authentic Balinese and Javanese fare.
