There are few better ways to spend your Christmas than a stay at the elegant and secluded Capella Singapore. This December, the resort’s staycation package from December 6 to 30 is ideal for making memories with your closest friends and family. You are offered, for instance, your choice of accommodation for your three-night stay, be it a cosy room or a luxurious suite, villa or manor (if you stay for two consecutive nights, your third night is complimentary!). Home celebrations have never looked more delicious with Capella Singapore’s lineup of festive takeaways. Roast dinners take the spotlight here, including a whole US tom turkey, a roasted Australian Angus beef ribeye, a honey-glazed bone-in gammon ham, and a New Zealand baby rack of lamb. But cast your attention to the new centrepiece for the year: a Norwegian ribbe, or roasted pork belly, crafted using Capella’s own general manager’s family recipe. Featuring an irresistible layer of crackling fat and tender pork and served with apple and prune compôte, boiled potatoes and sauerkraut, this unique roast will steal the spotlight at your family celebration.

No Christmas celebration is complete without decadent log cakes, and this year Capella’s offerings include a chocolate-almond cake, featuring chocolate sponge wrapped within a 64 per cent Valrhona chocolate Manjan crémeux. For those with a taste for something sweet yet fruity, the white chocolate log cake stuns with pineapple-lime mousse, mango-passion confit and coconut dacquoise for a tropical twist. Don’t forget other Christmas essentials like the traditional Christmas fruitcake spiked with Navegante rum, homemade stollen, and a panettone that shines with Sicilian lemon and Navegante rum.

Dining at Fiamma always feels like a warm hug, which is no surprise when you have hearty Italian flavours inspired by the recipes of celebrity chef Mauro Colagreco’s grandmother. This Christmas, the simple joy of home-cooked meals is amplified by its festive offerings, expertly handled by head chef Antonio Corsaro. 

Look forward to the Christmas weekend with a five-course dinner on Christmas Eve. A spicy octopus salame is just one of three aperitivos you can choose from, leaving your taste buds tingling with its mix of spicy sausage and coriander pesto. Move onto heartier plates like a rich butternut squash soup with fagotelli pasta, and black truffle and gnochetti sardi pasta, both of which are satisfying with stewed octopus and tomato sauce. The tiramisu at Fiamma, of course, is widely celebrated as one of the best in Singapore, and this Christmas season, it comes with a pistachio twist with a mascarpone pistachio cream atop Savoiardi biscuits soaked in espresso and Amaretto. With a complimentary flute of champagne and an optional top-up for a wine pairing, it’s the perfect Christmas Eve dinner to herald the holidays.

Return the following day for a lively Christmas Day five-course dinner that raises the ante even further. Hokkaido scallops, for instance, are generously topped with Oscietra caviar and pine nuts, while umami flavours continue to triumph with a black truffle risotto served with huge Mazara del Vallo red prawns. Look out for the Australian Wagyu beef fillet as well, accompanied by seared foie gras, red wine jus, and black truffle sauce. Of course, who can’t end the meal with the traditional Christmas panettone? 

Not one to miss out on New Year’s Eve celebrations? Make sure to head down to Fiamma for dinner on December 31. A four-course menu is served during the restaurant’s first seating, which includes highlights like blue lobster bisque and marinated kingfish. But to celebrate the New Year in style, go for the second seating instead, which offers a seven-course menu till 1am. As a DJ spins live beats from 9pm onwards, feast on delicacies like Tarbouriech oysters, wild-caught sea bass with fennel in a citrus sauce, and a cantucci served with almond espuma and orange sorbet.

4. Cassia

For elevated Cantonese delights, Cassia is not to be missed. Make sure to book a table on Christmas Eve and Day, where a six-course menu awaits. Take the four-head king prawn that’s lusciously baked with cheese and butter, or the wok-fried Australian Wagyu beef served with a savoury Italian truffle sauce. 

New Year’s Eve and Day dinner is no less special, with a charcoal-barbecued, honey-glazed Ibérico pork char siew to whet the palate before tucking into a braised South African four-head abalone with New Zealand fish maw. Cassia’s signature fried rice is also elevated here with Boston lobster and golden broth, making it tantalisingly addictive.
