I have quite an experimental palate, so I love it when pizzerias take a risk and incorporate local ingredients into this tried-and-tested formula. That’s why I'm a big fan of Alvy's, particularly their Bak Gwei pizza, which features a sourdough crust, gruyere bechamel sauce, char siu, mozzarella and—here’s the kicker—“geung yong” or the traditional Chinese scallion-ginger condiment.
