Self-proclaimed “meat atelier”, Fat Cow, offers some of the best beef cuts and innovative Japanese food in town.

The Fat Cow serves some of the best grades of Wagyu beef in Singapore. This exclusivity is also reflected in the restaurant’s limited capacity, as they hold only 18 diners in the main dining room. These are some of the factors that make dining at Fat a truly unique dining experience.

 

The gorgeous main dining room looks more like a theatre. At centre stage is a Japanese charcoal grill that lends a warm glow to the room. All diners get front row tickets to the show – as all of the seats situated at the long u-shaped counter.

 

The beef served is A3 and A5 grade wagyu from Saga, and only two restaurants in town are lucky enough to serve this.

 

A great way to explore the tastes and textures of wagyu is by ordering the Fat Cow. This cushion cut steak has a more developed beef flavour and a springy, soft texture. The meat is enhanced with a 12-year Yamazaki miso marinade, and the taste is deep and intense.

 

The rest of the menu doesn’t offer the run-of-the-mill Japanese fare. Fat Cow serves up innovative combinations of some of the best ingredients from around the world.

 

The tai carpaccio is excellent and is a thinly sliced snapper with kelp and shaved black truffle. The dish is simple and clean and shows off the natural sweetness of the snapper. The sake and garlic Norwegian mussels are also fantastic. The mussels are steamed to buttery perfection until they are melt-in-your-mouth soft. 

 

To end your meal extravagantly, try the Side-Cow, which is Fat Cow’s interpretation of the classic Side Car. The cocktail is created with Henessey XO Cognac and yuzu and the rim of the glass is dusted with sugar and gold dust.  The Fat Sour is another interesting creation that is made with whisky, mole bitters and homemade Suntory malt syrup.
