A new chef at the helm means a refreshed contemporary Sicilian menu for Element Restaurant.

Carmelo Carnevale, who had worked in some of London’s leading restaurants such as Harry’s Bar, George Club and Annabel’s, is the new executive chef of Amara Singapore. His first order of business was to overhaul Element Restaurant, which now offers a refreshed contemporary Sicilian menu in a Mediterranean-themed interior. 

The menu, which he says “uses only the freshest produce from the Mediterranean regions”, starts with an array of small plates such as a serving of the 24-months aged parma ham with melon and asparagus, as well as a colourful selection of grilled vegetables. Mains are a choice from the pasta selection—which include homemade cavatelli with a tomato and aubergine sauce, duck ravioli with sage butter and pistachio, and linguini with the lobster and shellfish sauce, among others.

The second main course is dedicated to proteins; choose from six options such as the charcoal grilled beef tagliata, stone-baked corn fed spring chicken, and charcoal grilled lamb rack.
